Recipe: Applesauce Spice Cake

Yesterday I stopped by Chicken Scraps R Us to buy something, and as soon as I walked through the door,  Produce Guy spotted me.

“Hey Mavis… You’re just in time.  I was getting ready to toss a bunch of scraps.  Let me get them for you.”

“Sweet,” I somehow mustered.

2 minutes later I found myself wheeling 5 boxes of scraps to the car. I quickly loaded them into the backseat, and then I drove off, totally forgetting to make my purchase.

As I was sorting the boxes, I noticed one of them was almost half full of free apples.  I stood there dazed for a good 5 minutes before I realized I was actually going to have to do something with the apples.  I mean, that’s the whole point of picking up free food isn’t it?  Even if I didn’t plan on picking it up, or really had the extra time to do anything with it, I still had to do SOMETHING.  I couldn’t let it just rot on my kitchen floor or in a dumpster now could I?  I think I am officially over the honeymoon stage in my adventures with chicken scraps.  Don’t get me wrong, The Girl and I LOVE all the free fruits and vegetables we are able to salvage {for the record, the HH and Monkey Boy still think we are weird} but it really is a lot of work.

So even if I come off as a little cranky, I still think it’s worth it.  My freezer is proof of that.

So what did I do with all those apples?  I made a giant pot of applesauce of course.  And then I made an applesauce cake.  Because honestly, I didn’t know what else to do.

Spiced Applesauce Cake {slightly adapted from this Gourmet recipe}

Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • 1/8 teaspoon ground cloves
  • 1 stick unsalted butter, softened
  • 1 cup packed light brown sugar
  • 1 teaspoon pure vanilla extract
  • 2 large eggs
  • 1 1/2 cups sweetened applesauce

The original recipe calls for a cream cheese frosting.  But I had a bit of leftover butter cream frosting from the cupcake making extravaganza so I used that instead.

Directions

  • Whisk together flour, baking powder, baking soda, salt, and spices.
  • Beat butter, brown sugar, and vanilla with an electric mixer at high speed until pale and fluffy. Add eggs,  then beat in applesauce. At low speed, mix in flour mixture until just combined.
  • Spread batter evenly in pan and bake until golden-brown and a wooden pick inserted into center comes out clean, 40 to 45 minutes. Cool in pan 15 minutes.
  • Frost cake and serve with a scoop of vanilla ice cream if you have it.

How To Grow Your Own Food: Vegetable Garden Tour

This morning it’s a bit chilly outside.  And I’m glad.  Although I’ve been able to enjoy a weeks worth of sunshine and warm weather, I’m ready for a break.  Just as long as the cooler temperatures don’t harm the vegetables.

I’ve been debating on whether or not to plant the remaining 80+ tomato plants outside over the last few days, but I think I’ll wait.  And it’s hard.  It’s hard to stare out the back window and look at bare garden beds.

But I just can’t chance it.

Here’s a look at what’s growing in the raised garden beds right now:

Red Potatoes.

Crimson Red Radishes {find the seeds HERE}

Broccoli, Celery and Wall Walla Onion starts.  After pulling up the Broccoli Raab I planted a few red onion bulbs.  I should start to see those sprouting in a week or two.

Giant Cabbage in the front of the bed and Brussels Sprouts towards the back.

Sugar Snap Peas climbing up a handmade pea trellis.

The first round of the outdoor spinach looks like it’s ready to be picked.

Heirloom carrots lined up and ready to grow.

The vegetable garden is really starting to look and feel like a mini farm.  I can’t wait to start planting pumpkins, winter squash and beans.  It shouldn’t be too much longer. I hope.

Recipe: Easy Mini Quiche with Bacon

Guess what were are having for dinner tonight? Breakfast! I made some mini bacon quiches this afternoon and now all that’s left to do is have Monkey Boy make a few pancakes to go with them.  As soon as I finish typing up this recipe, I’m tossing on my pj’s, and calling it a day. Who says you can’t eat breakfast for dinner and be in bed by 7pm? I’m tired.

Plus, I have to wake up at the crack of dawn anyway to let all those chickens out every stinkin’ morning. Can you believe how early the sun is rising lately? Holy Canolies.

Ingredients

5 fresh eggs
1/4 cup green pepper, chopped
1/4 cup grape tomatoes, chopped
1-2 green onions, chopped
2 slices cooked bacon, chopped
1/4 cheddar cheese {or whatever kind you prefer}
1/4 cup milk {I used 2%}
salt and pepper to taste
6 egg roll wrappers

Directions

In a large bowl combine the the ingredients except the egg roll wrappers and olive oil.  Using a biscut cutter cut circles out that are about 1 inch larger than the base of a muffin tin.  Brush muffin tin with olive oil and carefully place cut out egg roll wrappers in the center of each tin.

Fill with egg mixture until just below the top of the egg roll wrapper. Bake at 350 degrees for 1o minutes or until the eggs are lightly browned and cooked in the center. Serve on a fancy platter.

Easy Crafts For Kids: How To Make Sidewalk Paint

Whipping up a batch of sidewalk paint is not only easy, but it might just keep the kids busy long enough for you to get dinner ready as well.  Have you ever sidewalk paint before?

If not, here is how to make it:

Mix equal parts water and corn starch {I used one cup of each} in a bowl and mix until the cornstarch is dissolved.  Next, grab one of your old muffin tins and fill the muffin cups with about 1/4 cup of the corn starch and water mixture.

Add 2 drops of food coloring for lighter colors and 4-5 drops for darker colors.  Walk the tin of sidewalk pint outside, hand your kiddos a few paint brushes… and let them have some fun.  The chalk washes of easily when they are done.
